I cannot see that for any reason you will have any problems whatsoever in getting Visa's or sharing hotel rooms in the UAE ,Jordan or Oman. Just check that Canadian citizens can get Visa on arrival in those three countries I am sure they can so do not bother obtaining them before hand. Whilst it is quite common to see Arab men holding hands it would probably not be appropriate for ladies, as against girls, to do so. Oman is the most friendly middle east nation and there for sure is no no issues for you both to visit.
